Crumby Cupcakes

Ever had a really needed tea time break and had the need for sweet?

Me: “Those cakey treats look scrumby but those bikkys look tasty too!,  ARGH! I CANT DECIDE!”

Little voice in my head: “well why not both!”

Me: “But won’t I look like a little piggy?”

Little voice in my head: “Well maybe you should combine the two?”

Me: “My George I think you’ve got it!, I think you’ve got it!”

Plus I wanted to find out the trick into piping perfect buttercream icing, uno the kind you see in pictures. I think I know finally (what’s annoying is that no-one wants to tell you HOW they discovered it so you have to do the searching yourself however you knowing the trick could be a treat to their business which I also understand…but anywho on with the yummy crummy!

Makes 12 cupcakes

Sweety rating: Medium to high (depending on how much buttercream you pipe!)

Ingredients:

  • Self-raising flour (4oz)
  • Softened butter (4oz)
  • Caster sugar (or granulated whatevs) (4oz)
  • 2 medium eggs
  • Vanilla essence (1tblspn)
  • Shortbread biscuits (your prefered amount)
  • Love

Equipment:

  • A bowl
  • Another bowl (so 2 bowls)
  • A spatula
  • A tablespoon
  • An oven
  • Cupcake tin
  • Cupcake cases
  • Rolling pin
  • An electric mixer or hand mixer (if your feeling lazy)*

*optional so no pressure!

For your buttercream you’ll need a buttercream recipe (mine from a previous recipe or your own), industrial blue piping bags and scissors!

Cream butter + sugar till light and creamy creamy creamy!

Add those eggs! MIX gently!

Add that tablespoon of vanilla!

And finally the flour and fold it up!

Spoon it into your cases a tablespoon and a half for each (give or take). Bake in your ....preheated oven for 15-20 mins. I'm sure you know how to check when they're done (no not eat!).

Now pipe away from the outwear edge of the cupcake inwards, the further you pipe inwards you will gentley lift up the piping and finish up with a peak like you see on ice-cream whips.

Roll or sprinkle your biscuit crumbs around the edge of your icing, do this whilst the icing is still wet.
