Or Bananaberry? Which name is best? So I havent done any baking in a while and I’ve missed it.
Makes 11/12 cupcakes
Sweety rating: medium (so you can go for more and it’s not sickly)
- 4oz Butter
- 4oz Sugar (granulated or caster)
- 4oz Self Raising flour
- 2 Eggs (slightly beaten)
- 1 tsp Vanilla
- 2 ripen soft Bananas (softer the better)
- 2 heaps of Strawberry jam
Equipment you’ll need:
- Electric mixer
- Spoons and a knife
- Cupcake tin and cases
Let’s get started!
Beat your sugar and butter till it’s pale and fluffy.
Add your slighty beaten eggs to your butter/sugar mixture.
Add the vanilla and give it a little stir.
Fold in the flour till well combined.
Now mush those bananas up until it looks like yucky baby food mush.
Sieve though your jam heaps with a spoon. It smooths the jam lumps and seeds.
Put both strawberry and banana into the bowl and fold them into the mixture.
Spoon the mixture into the cupcake cases and put into the oven at 180c (I dunno the ‘F’ and gas marks…I know I suck). After your 15-20 mins keep checking the cupcakes to make sure their done and if they come out almost clean then it’s done however if your poker/knife comes out wet then give it 5 more mins.
This is what I mean…if your knife does not look like this then give it 5 mins more until it looks like my knife.
Once done they should look golden brown and tanned as if they came back from Ibiza!
