Chocolate Chunk Cookie Crush


The sun was shining and the cool breeze was wonderful, I was in the sweet treat mood and the ice cream van was nowhere to be seen. I could tell they wanted me to suffer in the scorching heat and so war was on!

I made the most awesome cookies 2 years ago and I couldn’t find the recipe…until NOW! This recipe has been modified by me with research.

250g plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
170g unsalted butter, melted
200g dark brown soft sugar
100g caster sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
325g chocolate chips
I also added a chopped bar of chocolate for chunk but that’s optional

Preheat the oven to 170 C / Gas mark 3.

Grease baking trays or line with parchment.

Sift together the flour, bicarb and salt; set aside.

In a medium bowl, cream together the melted butter, brown sugar and caster sugar until well blended. Beat in the vanilla, egg and egg yolk until light and creamy.

Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon.

Drop cookie dough onto the prepared baking trays, with each cookie around 4 tablespoons of dough (for smaller cookies, drop 1 rounded tablespoonful and adjust baking time as necessary). Do not flatten the dough. Cookies should be about 8cm apart.

Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted.

Cool on baking trays for a few minutes before transferring to wire racks to cool completely.

Enjoy this foolproof chocolate chip recipe and if you want double chocolate chip cookies just add 1 or 2 tablespoons of Cocoa powder to the dry ingredients.

Birthday girl


July the 7th is/was my birthday where I turned 24. I’m not looking forward turning 25 next year but this year I had an awesome BBQ where I had family and friends eating, drinking and celebrating with me and my family with a bring a bottle theme. Everyone was enjoying the good times and so was I. I held the party on the 6th of July so Sunday was the party day which made my actual birthday day on Monday a real drag but thank goodness for the birthday pancakes.

Eventually things got a little better and on the 8th I realised that it weren’t so bad and that next year me and my family are going away or doing something different for my celebration. July always clashes with summer plans.

Later that night I made a Retro Red Velvet cake which went a little pear shaped on presentation but tasted yummy yum which was a great pud after pizza.

This Old Thing


The vintage clothes show is awesome. Two esposides in and I’m buzzing with excitement of going out and buying old gems to revamp and work!

Before I used to look into vintage shops all around (mainly Shoreditch since I work there) and get so discouraged from the oldness and OTT prices. What happened to vintage that made it so mainstream and costly (the same freaking price as high street)?

Now I got a steady job I’m going to shop one fair each month, makes sense as it’s payday and search for gems that will fit me and I’ll make sure of it that you’ll see it all.

Which reminds me I got a gem in my closet (remember that heavily beaded 80’s top from my Youtube vid What’s in my Wardrobe ) which needs to be altered and paired with something totally fetch…
…ummmmm interesting.
